Water that is too hot

Whether it's matcha or matcha latte, the water temperature must not exceed 80°C. Otherwise, the matcha powder will "burn," leading to a bitter taste.

Poor frothing

There's a good reason why traditional matcha preparation is a meditative ceremony. If you don't take enough time to whisk it, lumps and an uneven texture can form.

Quality of the matcha powder

Matcha's desirable umami flavor comes from the quality of the powder. For excellent aroma, preferably buy organic matcha.

Enough is enough

Tastes differ, as is well known. However, using too much matcha leads to an overwhelming aroma that quickly turns bitter.
